How does it work:

  1. Principle of Water Electrolysis: When an electric current passes through the electrodes, water molecules (H₂O) are decomposed. At the anode, water molecules lose electrons, producing hydrogen ions (H⁺) and oxygen (O₂). At the cathode, water molecules gain electrons, producing hydroxide ions (OH⁻) and hydrogen gas (H₂).
  2. Generation of Hydroxyl Free Radicals: During the electrolysis process, the generated hydroxide ions (OH⁻) further react near the electrodes, forming highly oxidizing hydroxyl free radicals (·OH).  Hydroxyl free radicals are a type of reactive oxygen species with extremely strong oxidizing capabilities, capable of rapidly decomposing organic pollutants.
  3. Oxidative Purification Process: The generated hydroxyl free radicals undergo oxidation reactions with organic pollutants on the food surface (such as pesticide residues, bacteria, viruses, etc.).  Organic pollutants are decomposed into harmless substances, such as water, carbon dioxide, and inorganic salts. The cell structures of bacteria and viruses are destroyed, achieving sterilization and disinfection.
